Tofu Scramble

Ingredients:

1 block of extra firm tofu

1/2 red bell pepper chopped

1/2 yellow onion diced

2 cups baby spinach

1 tablespoon olive oil

1/2 teaspoon turmeric

1 tablespoon nutritional yeast

1 teaspoon garlic powder

1 teaspoon onion powder

1 pinch of red pepper flakes (optional)

* Salt and pepper to taste

Instructions:

  1. In a skillet on medium heat, add in olive oil, onion and red bell pepper. Sauté for 3-4 minutes.

  2. Crumble tofu block into the pan (you can use your hands) and sauté for 2 minutes.

  3. Add in spices (turmeric, nutritional yeast, garlic powder, and onion powder) and mix well.

  4. Add spinach to the skillet and sauté for another 2-4 minutes.

  5. Serve and enjoy!
