Mushroom Bolognese

Ingredients:

4 tablespoons of olive oil

16oz box of spaghetti

8oz baby Bella mushrooms

28oz can of crushed tomatoes

1/2 cup of shredded carrots

6-10 cloves of garlic

2 celery stalks

1/4 cup of fresh basil

2-3 tablespoons of brown or white sugar

*Salt and pepper to taste

Instructions:

  1. In a food processor, add mushrooms and pulse until the mushrooms are roughly the size of ground meat.

  2. In a large pan on medium heat, add 2 tablespoons of olive oil and the mushrooms from the food processor.

  3. Add carrots, garlic, basil and celery to the same food processor and pulse until they are the same size as the mushrooms.

  4. Add this mixture to the pan of mushrooms and sauté for 3-4 minutes.

  5. Add sugar

  6. Add the can of crushed tomatoes to the pan and turn down the heat to simmer for 15-20 minutes. Remember to stir occasionally.

  7. Add salt and pepper to taste

  8. While the sauce is simmering, cook the spaghetti. Once the pasta is done, toss with 2 tablespoons of olive oil to prevent the noodles from sticking.

  9. Serve and enjoy!
