Heart of Palm Cakes

Ingredients:

4 tablespoons olive oil

1/2 yellow onion, diced

2 cloves of garlic, minced

1/2 red bell pepper, diced

1 celery stalk, diced

15 oz can of artichoke hearts

15 oz can of heart of palm

1 tablespoon cornstarch

2 teaspoon seafood seasoning

1/4 cup vegan mayo

3/4 cup panko breadcrumbs + 1/4 cup panko breadcrumbs

*Optional 1 teaspoon vegan Worcestershire sauce

*Optional lemon wedges

Directions:

1. In a pan on medium/high heat - add 2 tbsp olive oil, onion, bell pepper and celery. Saute for 4-5 mins. Add garlic and saute for another 1-2 mins. Remove from heat and set aside.

2. In a large bowl combine cornstarch, seafood seasoning, vegan mayo, and 3/4 cup panko breadcrumbs. Mix well.

3. Drain and rinse the heart of palm and artichoke hearts. Chop the heart of palm and artichoke hearts to resemble lumps of crab. Add vegan mayo mixture and stir well.

4. Then add cooked veggies and combine well. Chill in the refrigerator for at least an hour.

5. Remove from the refrigerator and form patties. In a shallow bowl, add remaining 1/4 panko breadcrumbs and cover patties on both sides. Do this for all the remaining patties.

6. In a pan on medium/high heat, add 2 tbsp olive oil and cook patties for 3-4 mins on both sides or until golden brown.

7. Serve and enjoy!
