Skillet Cookie

Ingredients:

1/2 cup coconut oil - not melted

1 1/4 cup brown sugar

2 tsp pure vanilla extract

1/4 cup coconut cream or canned coconut milk

1/4 cup unsweetened applesauce

2 1/2 cup all purpose flour

1 tsp baking soda

1/2 tsp salt

1 - 1 1/2 cups mini vegan chocolate chips

Directions:

1. Preheat oven to 350.

2. In a large mixing bowl add coconut oil and brown sugar. Mix very well. Add vanilla and stir to combine.

3. Add coconut cream or coconut milk and applesauce. Mix well.

4. Stir in salt and baking soda. Then flour a little at a time. Combine well.

5. Pour cookie dough to a 10 inch cast iron skillet. Bake for 10-15 mins.
